KOWE on the Job: Behind the Scenes with Sweet Elevation

Welcome to the debut of "KOWE on the Job," our exciting new series in which Katie O' and Casey learn more about the incredible wedding vendors in the Capital Region and all that they do. 

With each adventure, we'll visit different vendors to learn their trade, try it out ourselves, and interview them to learn the secrets of their success. Our first stop? Sweet Elevation - a bakery in Latham, New York, owned by the incredibly talented Jen! This place is a hidden gem that you need to check out!

From Lake Placid to Latham: Jen’s Journey

Jen's passion for baking started early. She began decorating cakes at 19 and officially opened her first bakery, Cake Placid, in 2011. After selling her Lake Placid bakery in 2015 to focus on her family, Jen moved to Latham. Here, she got straight to work as an executive pastry chef at Putnam Market before establishing her bakery in Corporate Woods. Jen's journey continued as she expanded to a larger space in Latham, growing her team and business.

For The Love of Baking

Jen's love for baking stems from her creativity. Initially, as a psychology student (and quickly realizing that wasn’t her speed), Jen discovered her true calling in cake decorating. Entirely self-taught, Jen's skills developed way before the days of YouTube tutorials and TikTok hacks - we're talking about the era of Wilton magazines and VHS tapes. Her creative drive is evident in her intricate cake designs, which she continually develops by following trends on social media.

Trends in Wedding Cakes

Jen has noticed a significant shift towards more miniature cakes and cupcakes to save costs. Sure, it's practical, but let's be honest—it's less fun than creating those show-stopping multi-tiered masterpieces. On the flip side, vintage cake designs are coming back, and Jen is all about them. These old-school designs let her show off her decorating skills and bring a bit of nostalgia to the table, which we love.

Community Involvement & Classes

But wait, there's more! Sweet Elevation isn't just about weddings. Jen offers super fun classes and community events you won't miss. Think monthly sessions on French macarons, cookie decorating, and cake decorating. Plus, the bakery hosts fabulous parties where guests can eat, drink, and get their decor on. We’re sold!

Jen's all about the community, too - she takes her cookie-decorating skills on the road, like decorating cookies with preschool kids and personalizing them with adorable edible photos. How cute is that?

Expert Tips & Personal Touches

Jen's Pro Tip: cakes made from scratch (AKA her cakes 😉) should be served at room temperature for the best flavor and texture. Think about how hard it gets when your butter is in the fridge. The same goes for cakes and their buttercream! And although custom cakes are an investment, to us, they're worth it as you're getting top-notch ingredients and loads of love in every bite.

And for those thinking about freezing their wedding cake, Jen says skip it! Enjoy the fresh cake and treat yourself to a new anniversary next year. So much yummier!

Jen’s Favorites

When she’s not in the bakery, Jen loves vacationing on the beach in Fort Lauderdale, usually timing her trips with the SoFlo Cake and Candy Expo - talk about a sweet getaway. As for around town, you can find her enjoying cozy vibes at local favorites like Tipsy Moose, Phillies, and Pat’s Pub in Watervliet.
